About Us Mesquite Barbecue was established in 1959 by Herbert Oyler, who also invented the Oyler rotisserie smoker pit, which is used all over the world today. he partnered with Leon Crouch to handle operations (a former pit master at Red Bryan’s) at Mesquite BBQ. Oyler met an untimely death in 1973, Leon Crouch, would take over with his wife Katy and continue with Mesquite Barbecue. When Leon passed away in 1983, his son Kent Crouch took the reins along with his mother Katy. Kent moved the shop one street South to its current location. In 1996 Kent married Lisa and she too would join the team. The pair began building the foundation, we all know and love today. Lisa would add a stuffed baked potato to the menu. (Thank you, Lisa). They also hired on their oldest son Dustin in 2007 as manager. Dustin’s wife Melanie would join in 2009 to prepare and exe- cute a dessert menu. With Kent’s retirement in December 2017 his son Dustin Palmer, became the proud owner and operator along with his wife Melanie. Dustin and his family are honored to continue the legacy of Mesquite Barbecue for many years to come.
